When we think about space exploration, we usually picture rockets, spacesuits, and futuristic spacecraft. But there is another challenge that is just as important: food. Astronauts cannot simply bring a refrigerator, order takeout, or grow a full garden—at least not yet. So scientists are working on new ways to make food that can survive the journey into space and keep astronauts healthy.
A 2025 review published in Life Sciences in Space Research looks at the technology behind space food and how it could support future long-duration missions.
Space food has to meet some unusual requirements. It needs to be lightweight, compact, nutritious, safe, easy to prepare, and able to last for a long time. It also cannot create lots of crumbs or loose pieces, because floating food particles can be a problem inside a spacecraft. Food also has to work in microgravity, where liquids and other materials behave differently than they do on Earth.
Scientists use techniques such as freeze-drying, dehydration, and irradiation to help food stay safe and preserve its nutritional and sensory qualities. Special packaging is also extremely important. It needs to protect food from moisture and gases while being lightweight and strong enough to survive the conditions of space.
But future astronauts may have more exciting options than packaged meals. Researchers are exploring 3D-printed food, which could potentially allow meals to be customized for an astronaut’s nutritional needs. Scientists are also studying space farming, including growing fresh vegetables in microgravity. Fresh food could provide important nutrients while also giving astronauts something familiar from Earth during long missions.
What I found most interesting is that food is not just about keeping astronauts from getting hungry. Good nutrition helps protect the body from some of the effects of spaceflight, including muscle and bone loss, stress, and nutrient deficiencies. Food can also contribute to astronauts’ psychological well-being during long periods away from Earth.
As missions become longer and humans prepare to return to the Moon and eventually travel to Mars, food technology will become even more important. The future of space exploration might depend not only on better rockets, but also on figuring out how to make a good meal millions of miles from home.
Clearly, space food sounds simple, but it is actually a huge science and engineering problem. The next time I see astronauts eating in space, I’ll probably think less about what they are eating and more about how that food managed to get there!
